Kebab Maqluba

- Basmati rice
- Jekor kabab
- Spices (cumin, coriander, cinnamon, paprika, and turmeric)
- Onion, bell pepper, tomatoes, potatoes, and optional eggplants
- Chicken bouillon
- Oil for frying.
Instructions
- Rinse Basmati rice and mix with spices in a bowl.
- Fry jekor kebeb
- Fry onions until golden and crispy, then fry potatoes (and eggplants if using).
- Layer fried jekor kebab, potatoes, bell peppers, tomatoes, and spiced rice in a pot.
- Repeat layers and end with a layer of rice on top.
- Dissolve chicken bouillon in warm water and pour over the layers.
- Cook covered over low heat for 30-40 minutes until rice is cooked.
- Invert the cooked Maqluba onto a platter, garnish with fried onions, and serve hot.
